Brosseau Vineyard, Chalone AVA
The idea behind this wine was based on a natural Chardonnay the cellar team tried from the Margaret River in Western Australia. The wine was bottled unfined/unfiltered with minimal SO2. Based on this bottle, we decided to make a natural wine wine with no additions at harvest, minimal intervention, and low SO2 at bottling. The first challenge was to find the right vineyard, since the fruit needed to express itself without any intervention. The Brosseau Vineyard in the Chalone AVA became an ideal site, mainly due to its remarkable combination of limestone soils, weather patterns and organic farming practices. We were able to secure 1 ton of grapes for this project and picked them early 9/5 and lightly pressed them in our basket press. The next day the juice was racked to neutral French oak barrels where we waited for the native fermentation to take place. Fermentation wrapped up on 9/22 and finished its native Malolactic fermentation a few weeks later. The wine continued to age until mid-January where the wine was racked to tank, and a small dose of SO2 (the only addition the wine ever saw) was made to keep from spoiling prematurely. Enjoy this natural, low SO2 wine from a truly remarkable vineyard.
