Tasting Notes
Dark fruit with layers of wisteria, anise, red pepper, wood, and cacao nibs. The palate is balanced delicately by more lively and fresh red fruit along with mocha, toasted coffee, vanilla and baking and tarragon spice. Tightly wound, this wine will open beautifully in front of a fire or in the company of a nice cut of meat.
Vineyard Notes
Grapes were sourced from 3 blocks of Cabernet Sauvignon at Massa Estate in upper Carmel Valley over the course of three weeks in late fall 2020. Massa Estate is a unique vineyard, in that it was planted to predominantly Bordeaux varieties in the early 1970’s and has been farmed organically since inception. The vines are wild, and unlike any any other vineyard in the area.
Production Notes
Harvested from 3 different blocks across the organically farmed Massa Estate between 10/4 and 10/25, the grapes were all sorted three times at Folktale, removing all the stems, any leaves and underripe fruit – leaving us with perfectly ripe berries, and nothing else. The native fermentations kicked off after about 4 days of pump overs, and lasted about 2 weeks before finishing up. The grapes were gently basket pressed and racked to barrels where the individual lots aged for 6 months before the final blend was created and returned to barrel to age for another 12 months, giving the wine 18 months in French oak (25% new).
