Tasting Notes
A bold Syrah, this is a smoky and savory flavor bomb loaded with layers – charred cedar wood, vanilla, soy, black tea, white pepper, sweet cherry cola, baking spice, tobacco, well worn leather, baker’s chocolate, and mocha. This wine shines now and will only enhance with age. Enjoy at your leisure.

Production Notes
Grapes were hand picked at dawn on 10/5 and gently sorted whole cluster into new 500L French Oak puncheons with the head boards removed. We layered the grapes with dry ice to cool the grapes, allowing for a 4 day cold soak. On day three, the grapes were foot trodded and the native fermentation kicked off by day 6. After 18 days, the grapes were gently basket presssed and racked to 1 year old French Oak barrels to age for 18 months, with one racking in the summer of 2018. The wine was racked to tank for bottling in May, 2019.
