Wine Profile
Tasting Notes
Meyer lemon, stone fruit, hay, apricot pith, beeswax, lightly toasted almonds and a lovely lemon Verbena nose. The palate has lively acid and balances the fruit with toasted marshmallow and elegant minerality.

Escolle Vineyard, Hyde and 17 Clones Tondre Grapefield, 76 and 96 Clones
Production Notes
Harvested between 9/3 and 10/1 from two different vineyards, our SLH chardonnay is sorted in the vineyard and gently pressed upon arrival at Folktale for 3.5 hours. From there, the juice is allowed to cold settle for two days before being racked to French Oak barrels for fermentation and aging. The fermentation lasted around 2 weeks, and the barrels were stirred 2x monthly after completion for the duration of the secondary ferment. The wine was blended in the summer of 2018 and was returned to barrels to age until bottling in March of 2020 (16 months total aging).
