Tasting Notes
This is a big, robust wine with layers of cedar, cherry cola, baking spice, and lingering soft tannin. We aged 20% of this wine in new French Oak barrels for 18 months, with the balance in neutral oak, allowing the wine to integrate and round out. The result is a rich luscious wine that pairs well with big flavors and big personalities.

Production Notes
Harvest took place 10/4/17 at dawn, hand picking the grapes into 1/2 Ton bins. The grapes arrived at the winery and were sorted and placed into a tank to cold soak for 4 days. The fermentation kicked off and lasted 16 days, after which we pressed the grapes and racked the wine to French Oak (20% new) to age for 18 months. In the summer of 2018, we racked the wine to tank, and back to barrel, removing the sediment in barrel. The wine was ultimately bottled in the summer of 2019, after 18 months of aging.
