Tasting Notes
The Santa Lucia Highlands is a perfect place to grow unique, delicious Chardonnay. The region’s signature minerality is strong in this wine, balanced beautifully with notes of apricot, butterscotch, and Meyer lemon. Its creamy texture and vanilla flavors create a delicious, lingering finish.

Production Notes
Harvest took place 9/15/16 before sunrise. The grapes arrived at the winery and were sent directly to the press. We lightly pressed the grapes for 3 hours, not exceeding 1.2 Bar to enhance to beautiful floral quality of SLH Chardonnay. The juice settled for 48 hours before being inoculated. 60% of the juice fermented in French Oak (23% new) and the balance in stainless steel. Once dry, the wine was blended and sent back to barrel for the secondary Malolactic fermentation to take place. The wine was racked to tank in late June for cold stability and filtration before being bottled 7/31/17.
