Wine Profile
Tasting Notes
This Pinot opens with juicy notes of blackberry, cassis, rose petals, and something like a strawberry-rhubarb pie. While the bouquet is delicate and nuanced, the palate is bold and complex with strong notes of black pepper, licorice, and spice. Elegant, complex, and spicy, this wine should be decanted before enjoying.
Vineyard Notes
100% 2A Clone, Escolle Vineyard
Production Notes
Grapes were hand harvested 9/8/16 at 2am from Escolle Vineyard in the Santa Lucia Highlands on a cold but clear morning. The fruit was delivered to Folktale, sorted by hand, then sent to tank to cold soak at 55F for 5 days. The fermentation went off without a hitch, peaked at 84F and finished within 8 days. Pressing took place 9/19, separating the free run juice from the press fraction. The wine was sent to barrel 9/20 where it sat until late August, just a week before bottling. The wine was bottled up 8/1/17.
