The juice natively fermented over nearly 4 weeks before we stopped the fermentation with just the right amount of residual sugar and bright acid to be perfectly aligned.  Enjoy this wine with your favorite Chinese takeout spot, spicy Thai dishes, or any stinky cheese.

Grapes from two vineyards in the Santa Lucia Highlands were harvested on 9/18.  Both blocks of fruit were pressed together, and pumped into French oak barrels for fermentation.  The wine fermented natively, and ultimately took nearly two months to complete.  Once complete, the wine aged on its lees, and was stirred for 3 months to enhance the mouthfeel and provide a better balance with the bright acidity.  After 14 months total in barrel, the wine was racked to tank and bottled early December 2020.

Grapes were harvested between 9/3 and 9/30 from 5 vineyards and 13 individual blocks in the Santa Lucia Highlands.  Each block was treated separately, and natively fermented in small batches. Each batch was scrutinized for its ability to be fermented whole cluster, resulting in the blend with 39% Whole Cluster fermentation. The batches continued to age until July 2020 when we blended the wines and racked them together. The homogenous wine continued to age for another 6 months before being bottled in December 2020.
