Escolle Vineyard has quickly gained esteem since being planted in 2008 in the Santa Lucia Highlands. We hand harvested clones 2A and 777 and natively fermented them in small batches. This site is true to the Santa Lucia Highlands character, producing fresh red fruit, black tea and spice aromas with a dark, broody nature and fine wood tannins on the palate.
Brosseau Vineyard in the Chalone AVA has a remarkable combination of limestone soils, weather patterns and organic farming that produces intense minerality, texture and richness in its wines. The Grenache was natively fermented then aged in 2 neutral 500L French oak puncheons for 16 months. The wine opens with wild cherry and baking spice and has an incredibly rich mouthfeel that lingers.
This carbonic wine was fermented without oxygen by allowing the grapes to ferment spontaneously under a thick veil of dry ice. The result is a true expression of the fruit - crunchy red fruit notes fresh cranberries and watermelon, cotton candy, Jordon almond candies, that finishes juicy and fresh with a soft nutmeg, rose, and sour cherry finish. Dark fruit with layers of wisteria, anise, red pepper, wood, and cacao nibs. The palate is balanced delicately by more lively and fresh red fruit along with mocha, toasted coffee, vanilla and baking and tarragon spice. Tightly wound, this wine will open beautifully in front of a fire or in the company of a nice cut of meat.
Whole Cluster fermentation has been a staple of old-world winemaking for generations. It is with this tradition and spirit that we decided to allow our grapes to natively ferment while remaining on the cluster, producing fresh Hibiscus, lavender and a Redwood forest floor nose and a juicy and lengthy savory finish.
This Pinot Noir is a crescendo- it begins softly with aromas of fresh rose, ripe strawberry, baking spice, pencil shavings, minerality, and a red chile before exploding across your palate with gorgeous, flavors of cherry skin, cinnamon, and dark chocolate finish. THE HOUND is a classic blend of Bordeaux varietals, combining 60% Cabernet Sauvignon, 11% Malbec, 11% Merlot, 9% Petit Verdot, and 9% Cabernet Franc sourced 89% from Massa Estate Vineyard and 11% from Cedar Lane Vineyard . The not-so-little brother of our Reserve Bordeaux blend, this wine is complex and elegant with aromas and flavors of blueberry, mocha, floral lilac, frisée, dusty vanilla, brown sugar, creme de cassis, pencil lead, cedar wood, and hibiscus. The texture offers nice richness with round and full tannins. The Hound is a beautiful, bold wine that will benefit from aging.
Daffodils, key lime, fresh cut grass, and soft bell pepper open to bright acidity and a peach and lemon balm finish. Drink nicely chilled and with your favorite type of oysters.
We left the Viognier grapes hanging an extra 50 days on the vine, and got just 120 gallons of this glorious juice. Picked at 33.5° brix, this sweet wine is full of honeysuckle and stone fruit flavors, and tastes like angels singing in your mouth.
Another beautiful vintage from our estate Mission Ranch vineyard in Arroyo Seco. Following in the footsteps of past vintages, this Chardonnay is cleanly balanced with notes of banana and kiwi with fresh cut hay, apple, and flint. Hints of cream pie and marzipan on the palate.
The juice natively fermented over nearly 4 weeks before we stopped the fermentation with just the right amount of residual sugar and bright acid to be perfectly aligned.
Often referred to as “orange wine” the practice of leaving the grape skins to ferment with the pressed juice dates back thousands of years to the Caucasus region where Europe and Asia intersect. This ancient practice of extended skin contact during the fermentation of white wines produces a rich and complex wine with added tannins and phenols, and of course the distinctive amber, or “orange,” hue. This wine expands the pairing options of white wine. The bright acid and added tannic texture allows this white wine to pair well with bigger, bolder foods, similar to a light red wine. Lightly chill and enjoy this unique white wine experience.
Blueberry, violets, persimmon, and cherry soda aromas are balanced by an earthy palette. Spices like nutmeg and cinnamon add nuance and subtle texture to this evolving wine.
Tondre Grapefield was planted in 1997 in the heart of the Santa Lucia Highlands and has been farmed Sustainably ever since. We hand harvested clones 943 Pommard 4, and 115 from this site and natively fermented the grapes in small batches with minimal intervention. Ripe cherry olallieberry, all spice and cardamom are lifted by a round, rich palate of sweet vanilla that lingers.

The Syrah was natively fermented in bins and 500L puncheons, then aged for 16 months in 13% new French oak (87% neutral oak) producing a wine that has rich, dark flavors and can be enjoyed for years to come.
THE MOUNTAIN is a big, bold blend of Cabernet Sauvignon and Malbec. The grapes were organically grown above 1200 feet elevation at the Massa Estate Vineyard in the Carmel Valley AVA, just a few miles east of Folktale Winery. This is the big brother of our red wine program. Unabashedly robust, this wine comes full of ripe blueberry, pomegranate, black cherry cola, cedar wood, cocoa, crème de cassis, granite minerality, sage and plums. The texture is full-bodied and rich with velvety tannins and a long finish. The Mountain is a force of nature that will benefit from aging.
